Recipe for Arabic style Chicken Biriyani
Basmati Rice/Long grained rice- 2 cups
Chicken- 8 pieces
Orange rind- that of one orange
Garlic- 4 cloves(chopped)
Cinnamon stick- 3
Coriander- 1 tbsp
Vegetable oil- 1/4 cup
Blackpeppercorns- 1 tbsp
Tomato puree- 1 cup
Salt -as per requirement
Method of Preparation
Heat saucepan and add oil.Add Bay leaf and saute onion and garlic till onion become translucent.
Add tomato puree and all the spices i.e garlic,cardamom,cloves ,cinnamon sticks ,coriander and black peppercorns.
Add chicken pieces and enough salt and allow it to cook.
When the chicken pieces are cooked remove the chicken pieces.In the broth (the water for the rice to get cooked must be 4 cups, so add enough water to make the broth to 4 cups)add rice and orange rind and let it cook.
Shallow fry these pieces in another pan.
To serve, place rice and on top of it keep 2-3 pieces of chicken pieces.
