Bakery Style Meat Roll

Bakery style meat roll is my humble attempt to recreate the rolls that I used to literally live with during my school days   when I was doing my XI th and XII th grade. Those years, my day starts as early as 6:00 am with tuition classes starts at 6:30 am .Again ,after school hours  tuition classes  may upto till 7:00 pm and sometimes upto 9:00 pm. At evening we all used to gather at the bakeries near school for munching snack before tuition hours .My choice was either a meat roll or chilli roll from Vyshak Bakery which would be more than enough till I get back home.

I dedicate this post  to my dear friend Mariam whom I lovingly call ‘Mariamma’ . Its been a while since I promised her that I would post the recipe of Bakery Style Meat Roll. Before moving on to the recipe, I would like to tell Mariamma that I love her so much for all the beautiful moments spent together at College and your home.

These days, I am too busy with office work. But Alhamdulillah, so far I am able to manage everything at home and office. Recently, I  have also started an instagram page  exclusively to showcase my culinary interests. I also realise that however dedicated I am to my office job, my passion for cooking  never dies and gives me equal pleasure.

Ingredients required

All purpose flour/Maida- 2 cups

Instant dry yeast – 1 tsp

Lukewarm Milk- Half a cup

½ tbsp sugar

Salt – As per taste

Butter – 1 tbsp

eggs – 2 beaten for dipping rolls before frying

Breadcrumbs for coating(Here I have used ground fresh bread)

Oil for frying

For filling

Beef -300g(Cooked and cut into strips, Reserve the water in which beef is cooked)

Tomato sauce – 3 tbsp

Red chilli sauce- 1tbsp

Soya sauce – 1tbsp

Red chilli powder-  As required for desired spiciness(add only if you want it to be more spicy)

Garlic – 2 tsp(chopped)

Onion – 1 big(chopped)

Coriander leaves-As required

Refined oil –as required

Salt- As per taste

Corn flour – 1 tbsp

Method of Preparation

First lets prepare dough for the rolls. Keep aside yeast in lukewarm water and sugar for around 15 minutes and let it froth. Now in a bowl take the flour and salt .Add the yeast mixture,butter  and milk. Start kneading by stretching the dough for around 15 minutes. Now place the dough covered with a wet towel for doubling in size.

Meanwhile let prepare the filling for the rolls.Heat a pan and add oil. The add in garlic and saute.Now add onion, beef ,tomato sauce,red chilli sauce , soy sauce  . Saute till everything is combined and then add corn flour mixed in reserved water used for cooking beef.Finally add in chopped coriander leaves and filling is ready.Divide filling into 8.

After the dough is doubled, punch it down and make into 8 balls and roll it out into thick oval shaped flatbread and place  filling into each one and tuck the dough  at the ends so that no filling comes out while frying. Similarly prepare remaining 7 rolls and cover it again with a wet towel for around half an hour for second doubling.

After this coat each roll in beated egg and dip in breadcrumbs . Do this for remaining rolls and deep fry in hot oil.The bakery style roll is done.
