When your effort pays off, you feel ecstatic. Seriously, you miss the real taste of Coconut cookies made with freshly grated coconut until you prepare by yourself and taste. This is undoubtedly the best coconut cookies, I have ever tasted. Do try it at home.
300 gms maida
250 gms butter
100 g coconut milk powder
200 g freshly grated coconut
150 gms powdered sugar
1/2 tsp vanilla essence
A pinch of salt
5 tsp granulated sugar(For sprinkling over the top)
Glazed cherries – As required
Method of Preparation
Beat up butter and sugar till fluffy .
Add in eggs one by one and whip up till mixed well.
Fold in flour/Maida gently with the help of wooden spoon.
Add in vanilla essence, Coconut milk powder, grated coconut and gently fold in flour mix.
You get a semi-thick fluffy better.
With the help of spoon(preferably icecream scoop) scoop tablespoon of batter into the baking tray/silicon sheet such that there is 1 to 2 inch spacing between each. Cut cherries longitudinally and place each into the middle of scooped batter.
Bake in a pre-heated oven at 180º C for about 20-25 minutes.
Transfer to a cooling rack.
Serve when it cools down.
