Being a great fan of chocolate and orange combo, this crepe turned out nothing less than heavenly taste for me. The silky and soft melt-in-mouth crepes layered with rich orange curd and topped with chocolate ganache…..Doesn’t sounds awesome???Do try it at home…
Recipe for Crepe cake(16-layered crepe cake)
For the crepes
All-purpose flour/ Maida – 3/4 cup
Eggs -3 eggs
Vanilla essence- 1/2 tsp
Milk- 1 cup
Butter- 50 g
Granulated sugar- 3 tbsp
A pinch of salt.
For the orange curd(Slight changes from Lemon curd recipe of Cutchi Kitchen)
Juice and zest of 2 large oranges
Unsalted Butter-110 g
Powdered sugar- 175 g
Eggs – 2
Corn flour/Corn starch – 1/2 -1 tsp
For Milk Chocolate ganache
Grated milk chocolate – 1 cup
Fresh cream/Heavy cream- 1/2 cup
1/2 tbsp unsalted butter(Optional)
Method of Preparation
To prepare orange curd.
Add powdered sugar,orange zest and butter to orange juice. Double boil this mixture.
To the boiling mixture , add lightly beated eggs. Now transfer this to direct heat(in simmer) and add 1/2 tsp cornstarch.
Keep stirring and it will thicken. If it is still watery, add 1/2 tsp cornflour and stir. Let this cool down.
To prepare crepes
Boil milk and butter together till it forms a uniform mix. Remove from heat.
When it is slightly warm, add lightly beated eggs,sugar, salt, vanilla essence and stir well.
Now add flour and thoroughly stir so that no lumps is found.
Heat a non-stick pan and prepare crepes by pouring batter over hot pan and spreading evenly.
Try to keep all the crepes to uniform radius.With this quantity of batter, I was able to prepare 16 crepes.
Let all the crepes and orange curd cool completely.(Don’t ignore this step)
Then place a crepe over the cake stand or plate and spread a spoonful(1 tbsp) of orange curd.
Place another crepe over it, again spread orange curd. Continue till the last crepe is placed.No need to spread orange curd over the last crepe.
Now prepare milk chocolate ganache.
Double boil fresh cream,butter and grated milk chocolate together.Keep stirring till a uniform mixture is formed.
While it is still hot pour ganache over the assembled crepe-orange curd cake. Wait till it sets.
Get ready for the gourmet treat.
