Extra Rich Chicken curry

By now,you all must be knowing that how much I love chicken..I do love making variations with the basic chicken curry and turn it into more delicious one. Wondering how it is extra rich??The chicken is slightly shallow fried before going into curry making.Coconut milk is added to the curry and furthermore coconut pieces are fried and added. Isn’t truly ‘Extra Rich Chicken curry’? All those calorie conscious people just stay away and never dare to prepare this curry 🙂 🙂 .Find out by checking the recipe

Recipe for Extra rich Chicken Curry

Ingredients required

Chicken – 10-12 medium sized pieces

Onion- 3 medium sized(sliced)

Tomato- 1( chopped)

Green chillies- 2 no.s

Ginger paste- 1 tbsp

Garlic paste- 1 tbsp

Garam masala- 1 tsp

Curry leaves- 3-4 sprigs

Coconutmilk- 1 cup

Coconut pieces- 2 tbsp( sliced thin)

Coriander powder- 3 tbsp

Chilli powder- 1 tbsp+ 1 tbsp for marination

Turmeric powder- 1 tsp+ half tbsp for marination

Salt-as per requirement

Oil- As required( I  used coconut oil but it can be varied as per your choice

Method of Preparation

Marinate chicken pieces with chilli powder, turmeric powder and salt for half an hour.

In a saucepan heat 3-4 tbsp oil and shallow fry chicken pieces. Make sure that the chicken pieces do not turn brown in colour and at the same time it is cooked properly.( Make sure that it is done in high flame)

Remove chicken pieces from oil and in the same hot oil saute onions and green chillies. When  onion becomes translucent add in garlic paste and ginger paste.Continue saute and then add tomato and saute.

Now add chicken pieces, coriander powder, chilli powder, turmeric powder and add coconut milk, salt and simmer for 20 minutes.

Finally fry coconut pieces and curry leaves and add it to the curry.
