I was fortunate enough to do my m tech in nit calicut. Momos was perfectly made by the chettah (any older guy is called ‘so’ by Keralites )in the canteen there. I do eat momos but not a great fan of it but Abu thoroughly enjoys having momos for tea-time snack. Although fried version is commonly seen now , the authentic recipe calls for steaming.
Chicken (cooked and shredded)/Beef (Cooked and minced)/ Soya nuggets(soaked in hot water, cut into small pieces and fried) – 1 cup
All purpose flour/ Maida- 1 cup
Onion- 1 medium sized(chopped)
Garlic (chopped) – 1 tbsp
Chillipowder- 1/2 tsp
Turmeric powder- 1/4 tsp
Garam masala- 1/4 tsp
Salt – As per taste
Coriander leaves- 3-4 sprigs(chopped)
Oil- 2 tbsp
Method of Preparation
First to prepare filling heat a saucepan. Add oil and saute onion and garlic in it.
When it is light golden brown colour add in chicken/beef/ soya nuggets and continue saute. Then add remaining ingredients(chilli powder, turmeric powder,garam masala and salt)and nicely saute. Coriander leaves should added only at the last.
Now keep aside the filling.
Prepare a dough by kneading flour, water and salt.
Make small balls from the dough and roll out into a kind of oval shape.
Keep filling inside the rolled out dough.
Fold into two , create plaits from the end.
Steam the prepared dough with filling.
Momos is ready…
