Non alcoholic Eggless Fruit Cake is a delicious dense textured cake unlike normal cakes that is fluffy, moist and airy. And so the baking time of this cake is longer than normal cakes.

Recipe for Non alcoholic Eggless Fruit Cake
For soaking in orange juice
½ cup raisins
½ cup chopped cashews
¼ cup chopped citrus peels
1/4 plus 8 no.s Black raisins
½ cup chopped dates
¼ cup tutti fruity
Few cherries, sliced
1 cup orange juice or apple juice
For the cake batter
2 and 1/4 cup all purpose flour/maida,plus for dusting dry fruits
1 and ½ cup demerara sugar or brown sugar
1 cup oil
1 cup milk
1 tbsp Synthetic vinegar
1 tsp baking soda
2 tsp baking powder
1 tsp vanilla extract
1 tsp nutmeg powder
METHOD OF PREPARATION

cover and let the dry fruits soak for in orange juice for 2 days
Stir at an interval 5-6 hours to get it soaked properly.
Strain out the soaked dry fruits reserving the fluid after straining used for soaking .Dust the dry fruits with flour and reserve.
preparing the cake batter
Grind sugar adding cloves, cardamom and cinnamon.
Preheat the oven to 180 degrees C.
Sieve the flours, baking powder and the powdered spice mix.
Add melted butter and demerara sugar and mix well with a spoon.Basic cake batter is ready.
In a bowl add milk and vinegar and stir gently.Add baking soda and stir. Add this mixture to the cake batter.
Add vanilla extract. Stir and mix quickly but uniformly. Pour the cake batter into the cake tin.
Shake the cake tin lightly so that the batter is spread evenly throughout the cake tin.
Place 8-9 black raisins on the top of the cake batter.Bake in the preheated oven for 190 degrees C for 1 hr or more or less depending on your oven.
