Wholewheat almond cookies- As the name suggests it is made out of wholewheat flour and almonds.These crispy cookies are a perfect accompaniment with a cup of tea/coffee . It is equally good for adults and children with the goodness of wholewheat and almonds. Making this cookies is so easy and does not require any whipping as it is eggless . Recipe for Wholewheat Almond cookies
2 cups wholewheat flour/atta-sifted through a sieve
¾ cup semolina/sooji/rava
¾ cups icing sugar
1 cup ghee
A pinch of salt
½ cup powdered almonds
Method of Preparation
Mix wholewheat flour/atta, semolina, sugar, almond powder and a pinch of salt.Mix well.
Add ghee and mix well till pliable dough forms.Let the dough rests for 10 minutes. Then shape dough into small balls and flatten slightly on top to get cookie shape.
Place them on a greased tray. Always leave 1 inch space between cookies giving room for expansion after baking.
Bake for 20-25 minutes at 160° C till edges turn golden brown.Remove from tray and transfer to wire rack to become crisp. Now it is ready to transfer into air-tight containers.
Notes:It is always better to bake in trays lined with parchment paper.Keep a check on your cookies after 15 minutes as it can easily get done anytime after that. Bake your first batch in the middle rack of the oven and subsequent batches on the top rack.
