Beef Dry Roast or Beef Varatiyathu is a common beef dish prepared in Kerala. It is a popular dish for all festive occasions in my home. This is yet another recipe of my Mother . I should say that she is a gourmet chef and whatever little I know about cooking is because of her. Among all beef dishes I have tasted, this is the tastiest one for me. It takes around 1 and ½ hours to prepare but trust me; the taste that you are going to experience is worth your entire efforts. Recipe for Beef Dry Roast
Ingredients required(My mother’s recipe)
Beef- 750 gm(cut into small pieces)
Onion(sliced)- 6 medium sized
Ginger paste- 1 tablespoon
Garlic paste-1 tablespoon
Tomatoes-2 no.s(chopped)
Green chillies-2-3 (chopped)
Coriander powder-5 tablespoon
Chilli powder-3 tablespoon
Turmeric powder-1 teaspoon
Black pepper powder-1teaspoon
Garam masala-1 teaspoon
Fennel powder-1 teaspoon
A Bunch of Coriander leaves(chopped)
Oil-100 gm(I have used coconut oil)
Salt- As per requirement
Method of Preparation
Wash and clean beef pieces and reserve.
In a pressure cooker add Onion, ginger paste, garlic paste, tomatoes, green chillies, coriander powder, chilli powder, turmeric powder, garam masala ,salt and reserved beef pieces.
Mix thoroughly with the help of a spoon (I used my hands to get it mixed).
Add half a cup of water to it.
Now place the cooker on stove and cook for 3 whistles. Leave it to cool.
Open the cooker and transfer contents to a saucepan (preferably non-stick).
Let it simmer until all water is evaporated. Stir it occasionally.
Now add black pepper powder, fennel powder, coriander leaves and add oil stirring it.
Keep on stirring until it becomes dark brown in colour as you can see. This may take some time but as I said earlier, your effort will not be in vain. Now Enjoy
