Recipe for Caramelised apple stuffed Biscuits
Ingredients required
3 cups all-purpose flour/maida
1 1/2 tbsp baking powder
1/2 cup vanaspati(The original recipe calls for vegetable shortening. As it is not available in Trivandrum, I used vanaspati or Dalda)
1/2 tbsp salt
6 medium sized apples(peeled and chopped)
Sugar- 1/2 cup
Cardamom powder- 1/2 tsp(You can use cinnamon powder instead. I prefer cardamom to cinnamon)
Sugar syrup (Prepare by using 1/4 cup sugar and two tablespoon water till one-thread consistency)
Method of Preparation
Sift all-purpose flour, baking powder and salt together.
To this add vegetable shortening or vanaspati .Blend till it resembles bread crumbs. Now place this mix in refrigerator.
Meanwhile in a saucepan add sugar, cardamom powder and apples. saute till it becomes brown in colour.
Now take 1/4 of the reserved dough and roll out to 1/2 inch thickness. With knife, cut squares and keep apple filling on one side. Then fold it to a triangle shape.Stick the sides. With the help of a fork give design on two shorter sides of the triangle. (See the photos below for more clarity)
