Garden Foccacia – Going with the trend!!!!

Garden Foccacia – The latest food trend hitting Instagram and Facebook and I made my own version and is sharing with you all. Freshly baked bread bread is always magical and when it is topped with gorgeous canvas of veggies and herbs , its truly magical and fun.

For this topping one can say Sky is the limit!!!!Get creative with all those your veggies and herbs at your home and have fun. So here I am sharing how I made my version and tips and tricks to make a perfect Garden Foccacia.

Ingredients required for making Foccacia Bread

2 to 21/2 cups all purpose flour/maida

1 tsp active dry yeast

1 tsp sugar

Salt as required

1 cup of lukewarm water

Extra virgin olive oil – 1 tbsp+ extra for brushing and drizzling

Oregano /Italian seasoning mix

For egg wash – 1 egg+2 tbsp milk beaten up nicely with a spoon

Veggies and herbs of your choice for topping

Method of Preparation

Add yeast and sugar to lukewarm water and rest for 10 minutes until it turns frothy.

Place 2 cups flour adding salt on the platform and make a well in the centre and start adding in yeast mixture and start kneading.

Meanwhile add olive oil and continue till the dough is combined.

Now knead the dough by stretching to the front and back and even after kneading for 5 minutes if the dough is sticky add in the remaining flour little by little.

Continue kneading till you get a nice elastic dough.

Brush the dough with some more oil and cover with cling film and keep aside for 1 to 2 hours until it gets double in size.Now first proofing is done.

When it is doubled punch it down and now add oregano or Italian seasoning and just mix.(No kneading required)

You can either divide this dough into two or can make one large focaccia bread.

Roll out the dough to 2 cm thick into a large rectangle  or oval or circular shape.Brush egg wash over the dough.

Get the veggies of your choice and make a garden now. Brush all veggies with olive oilI have used egg and tomatoes for the flower and egg yolk and carrots for the sun . Also threw in some onions and coriander leaves and okra for the green.

Now again cover this for second proofing for around half an hour.

When second proofing is done bake in preheated oven for 20-25 minutes at 200 degree celsius.

Note:Bake with bottom coil on and if required can sprinkle in some slat before baking which I love.
