The fragrance and aroma of ghee rice is absolutely luscious. It is not a difficult task and here, I have used pressure cooker method .Do try out the recipe of this delicious subtly flavoured rice .I would suggest extra rich chicken curry or varutharacha kozhi curry with the delicious ghee rice.
Recipe for Kerala style Ghee Rice
Ingredients required
Jeerakashala rice/Bangladeshi Biriyani rice- 2 cups
2 green chillies or sambhar mulaku or thondan pachamulaku
Ginger paste-1 tbsp
Garlic paste- 1 tbsp
Cloves- 2 no’s
Mace/Jathipathri/Javinthri- 1 or 2 pieces
Onion (chopped) – 2 tbsp
Grated coconut-1/4 cup
Ghee- 3 tbsp
Coriander leaves – few sprigs(optional)
Salt- as per requirement
Method of Preparation
Wash rice and reserve.
Grind grated coconut to a fine paste by adding water and reserve.
In a pressure cooker heat ghee and sauté onion,green chillies, garlic paste, ginger paste, cloves, mace and coriander leaves until onion is translucent.
Now sauté rice in it for 5 minutes.
Add coconut paste by adding water so that it is 3 1/2 cups.
Now add salt and cook for 2 whistles. Leave it to cool and ghee rice is ready.
Tips: – If you want you can add roasted cashew nuts, raisins and fried onions to the ghee rice.
