Carrot Halwa is a dessert that we all make at home . With loads of condensed milk, ghee and sugar, carrot halwa literally melts into your mouth. Formerly I used to make a fudge kind of halwa which is still a family favourite. But as you grow older , you cannot take your health for granted and I am more focussed to make healthier foods these days.This is a low fat version that you can enjoy guilt free.

Life takes an exciting turn every now and then. It happens with each one of us. Right now, our house construction is going on and it is so exciting to involve and bring in creativity to each nook and corner of the house. Insha Allah, we will be able to shift to our new home very soon. There is not a single day when planning for the interior (May Allah grant everyone with a shelter)

After around two years, (Alhamdulillah) we had gone for a short trip to a resort. Raashi was super excited about the trip and so did I. A short break from hectic life itself is so much relaxing and we had a great time even though it was just a single day trip. I do enjoy sightseeing but what excite me more about a trip is the food culture and the streets of an unknown place. Roaming about in the streets of an unknown place kinda intoxicates me. It thrills me so much to study about new cuisines, the raw ingredients that goes into the regional cooking and so on.

Another year has come to an end .Each year is a new revelation and Masha Allah everything went on very well keeping Covid apart. It was a beautiful year where self realization has helped me become a better person.

Being the first post of the year, let’s get into something sweet. Raashi’s food habit has quite changed .I am surprised to find that he started relishing many foods that he used to diligently neglect. Let me share the recipe of a low fat version Carrot halwa which was equally enjoyed by everyone at home.

Ingredients required

1 kg Red carrots (grated)

½ cup sugar

2 tsp ghee

½ litre milk

Some roasted pistachios/Almonds/Sunflower seeds

How to prepare

Boil the milk and when the milk roll boils add in the grated carrots.

Make sure that you prepare in high flame.

When all the milk evaporates keep stirring until it turns mushy.

Now add in sugar and keep stirring till it reaches halwa consistency.

Finally add in ghee and roasted nuts of your choice and carrot halwa is ready to be served.
