Recipe for Shrimp Biriyani / Chemmeen biriyani

Ingredients required

Shrimp – 1/2 kg (deshelled and deveined)

Onions – 3 + 1 medium sized (sliced and one is for frying)

Tomato – 2 (sliced)

Green chillies – 2 no.s(cut into two lengthwise)

Kashmiri chilli powder – 1 tbsp

Garlic paste – 2 tsp

Ginger paste- 2 tsp

Garam masala – 1+1 tsp

Turmeric powder – 1/2 tsp

Sunflower oil – For frying

Coconut oil- For frying

Ghee – 50 g

Coriander leaves/ Cilantro sprigs – 2-3 sprigs(chopped)

Banglashi biriyani rice/jeerakasala rice – 1/2 kg

Salt as per requirement

A handful of Cashewnuts and raisins

Method of Preparation

Cook rice in pressure cooker .( To cook jeerakasala rice heat 25 g ghee and after sauteing rice and 1 tsp garam masala. Then add water double the quantity that of rice . Add enough salt and Let it cook for 3 whistles. )

Marinate shrimp with kashmiri chilli powder, garam masala and enough salt for 15-20 minutes.

In sunflower oil, fry the marinated shrimp and reserve. Into the remaining oil add sliced onion and saute. When it becomes translucent add in green chillies, garlic paste and ginger paste and saute for 5-8 minute.

Now add sliced tomato and again saute for 3-4 minutes. Add reserved shrimp fry, garam masala, turmeric powder and cilantro to this. Add little water, salt as per requirement and let it simmer for 10 minutes.(It should not be too dry)

Now shrimp masala is ready.

Fry onions till golden brown in coconut oil . Also fry cashewnuts and raisins and reserve all these.

In a large pot add half of the shrimp masala. Over it put half the quantity of cooked rice, sprinkle some fried onions , cashewnuts and raisins. Over add remaining masala and again put the remaining rice over it. Pour remaining ghee over the top/ Now heat the pot in low flame(close the pot with a lid) and Put in simmer for 5 minutes. Now let it rest for another 5 minutes. Now open the pot and mix everything well . Before serving sprinkle remaining nuts and raisins and fried onions over the top.

Shrimp biriyani is ready.
